Israeli Couscous Salad

In a large bowl, add the couscous, olive oil,
chickpeas, lemon juice and zest, coriander, dill, parsley, pomegranate seeds, microgreens and salt and pepper and stir until well-combined and coated. Garnish with more fresh herbs, an additional squeeze of lemon and drizzling of your finest olive oil.


Scoop the salad into four medium-sized
mason jars, leaving an inch at the top (room
to shake). Store in the refrigerator until ready
to eat.
