Add the apple juice, caster sugar, lemon juice and mint to a saucepan and bring to the boil. Boil for 2-3 minutes, then remove from the heat and leave to infuse for one hour.

Remove the mint from the mixture and pour into a dish. Place into the freezer and stir the mixture every hour until the mixture is frozen. When ready, use a spoon or ice cream scoop to scrape the ice to create shavings, add the shavings to a glass and serve immediately.
