Apricot and Pistachio Couscous

Heat the olive oil in a frying pan over a medium-high heat. Add the red onion, red chilli and green pepper, and sauté for 3-4 minutes. Then add the ras el hanout, dried apricots and pistachios and sauté for a further 2-3 minutes.

Tip the contents of the frying pan into a bowl, add the couscous and mix together.

Bring the vegetable stock to the boil in a saucepan. Once boiling, pour the stock over the couscous mixture and cover the bowl with cling film. Let this sit for 10 minutes to absorb the stock.

Once all the stock has been absorbed, use a fork to fluff up the couscous. Then mix in the chives and coriander, before serving.
