In a large saucepan warm the oil and butter over a medium heat. Then add the onions, mushrooms, carrots, celeriac and potatoes, and cook for 8-10 minutes.

Add the paprika, bay leaves, allspice, caraway, marjoram and tomato purée to the pan. Mix the ingredients through and cook for a further 2-3 minutes.

Then add the red wine, stock and chopped tomatoes, and leave to simmer for 20-25 minutes until the sauce has thickened and the vegetables are cooked.

To make the sour cream, blend the silken tofu, cider vinegar and lemon juice together. To serve, top the goulash with the sour cream and chopped parsley.
