Preheat oven to 180°C/350°F/Gas 4. Blend the almond flour, lemon juice, olive oil, garlic, water, salt and nutritional yeast in a food processor until a smooth paste consistency is reached (4-6 minutes).
Turn the mixture out onto a sheet of cling film, and use this to shape it into a tight disc, about 3cm thick.
Turn it out onto a lined baking tray and bake for 20-25 minutes, until the surface is crusty and slightly golden.
Let cool before serving. Eat as you would a regular feta cheese, by adding it to salads or simply on a cracker.
