Baked Tomato and Basil Rice

Servings: Serves 2 as a main, 4 as a side

Preheat the oven to 180°C (Gas Mark 4, 350°). In a shallow ovenproof dish, mix together the rice, onion, garlic and stock.


Season the rice well, add the basil sprig and lay the tomato slices over the top.


Cover the dish tightly with foil and transfer to the oven to cook for 30 minutes.


When the rice has finished cooking. Leave to rest, covered, for a further 5 minutes to become fluffy.


When ready to serve, scatter over some extra fresh basil and a drizzle of extra virgin olive oil, if you like.
