BBQ Pulled Hearts of Palm

Put the hearts of palm into a food processor and pulse a few times until pieces are chopped into bite-size shreds.

Put the hearts of palm into a mixing bowl and add the BBQ rub then toss to coat. Set aside

To make the BBQ sauce, add all sauce ingredients to a blender or use a hand blender to combine. Set aside.

Heat a large pan over a medium heat, add 1-2 tbsp oil and the seasoned hearts of palm. Toss to coat and cook for 2-3 minutes to achieve some colour.

Add ¾ of the BBQ sauce, stir, and reduce heat to low-medium and cook covered for about 10-15 minutes, stirring occasionally.

To make the mayo, add all the mayo ingredients to a measuring jug and blend with a hand blender until emulsified and sauce is created.

Finely slice all slaw ingredients and place in bowl.

Add the mayo to the slaw veg and toss to coat. Season with salt and pepper.

Assemble burger by placing a couple of spoonfuls of the BBQ hearts of palm onto a fresh bun, then top with the mayo and lettuce.

Serve with sweet potato fries and some extra BBQ sauce.
