In a large saucepan or flame-proof casserole, add all the ingredients for the chilli and mix well to combine. Bring to a simmer, cover with a lid and leave to cook for 45 minutes, stirring occasionally. Add a little water if it looks at all dry.

Prepare your rice or chosen accompaniments while you wait for the chilli to cook.

When ready to serve, squeeze over lime and add a sprinkle of coriander leaves.
