Beefless and Broccoli Lo Mein

Ingredients

1 x 160g
pack of The Unbelievable ALT. Tender Beefless Pieces
100g
vegan ramen or linguini noodles
1 tbsp
sesame oil (or any neutral oil) or ¼ cup veggie broth (for water sauté)
1
onion, sliced lengthwise
2
Cloves Garlic, minced
2
carrots, cut into matchsticks or thinly sliced diagonally
1
large red bell pepper, julienned
1 tbsp
Rice Wine Vinegar
Red pepper flakes or sriracha, to taste (optional)
4-6
green onions
Bean sprouts, to taste
Coriander, to taste

Method

Cook the noodles according to the package instructions. For the last 2-3 minutes of cooking, add the broccoli to the saucepan with the noodles, strain and set aside.

In a mixing bowl whisk the tamari, maple syrup, sesame oil, rice vinegar and set aside. Add a pinch of red chilli flakes or sriracha for a bit of heat.

In a large frying pan, heat oil over medium heat. Add the onion and fry for 3 minutes until soft. Add garlic, carrots, and red pepper and fry for another 3 minutes.

Next, add The Unbelievable ALT. Tender Beefless Pieces to the frying pan and stir-fry for another 3-5 minutes.

Add the noodles, broccoli and sauce, mix well to combine. Add the green onions to finish and mix again for another minute.

Serve immediately with bean sprouts and fresh coriander and a sprinkle of toasted sesame seeds.
