Blackberry Vanilla Chia Pudding

For the blackberry compote

60ml (1/4 cup)
1/4 tsp

For the chia pudding



Make the compote by adding all the ingredients, except the chia seeds, to a small pan and bring to a gentle simmer. Lightly crush the berries with the back of a fork so that they release their juices but still retain some texture.


Remove from the heat and stir in the chia seeds. Set aside to cool completely.


Whisk together all the ingredients for the chia pudding in a large bowl. Then set aside to thicken to a pudding consistency.


Assemble the puddings by alternating layers of pudding, compote and fresh blackberries in a mason jar, or other portable container. Chill until ready to serve.
