Preheat the oven to 180°C/355°F/Gas 4. In a mixing bowl, add the bananas, vegetable oil, soya milk, coconut sugar, self-raising flour, baking powder and 200g of muesli, and mix this together thoroughly.

Spoon the mixture into the muffin cases, then sprinkle the remaining muesli over the muffins and bake for 35-45 minutes.
