Method

Place the garlic, water, bouillon, and some seasoning into a large pan and bring to a simmer.

Add the sliced leeks to the stock and simmer for 10 minutes or until beginning to soften.

Add the asparagus, broad beans and a squeeze of lemon and simmer for a further 3 minutes.

Taste to check the seasoning and adjust if necessary. Ladle into bowls and serve immediately, topped with a sprinkle of lemon zest.
