What can I do with purple sprouting broccoli?

 

Saucy Marinara

Make a simple but satisfying broccoli side of marinara with your leſt over purple sprouting broccoli. Heat a couple of tablespoons of olive oil in a pan over medium heat. Add chopped garlic and once it has cooked for a few minutes pour in a tin of chopped tomatoes, allowing them to simmer for a further few minutes before placing the purple sprouting broccoli into the pan too. Add seasoning to taste. Cover the pan and simmer for 10 minutes or for less time if preferred, this dish tastes best if the broccoli is tender but not overcooked.

 

Crispy Tempura

Tempura is a great addition to a finger buffet and not too difficult to make. To make the batter, combine 60g of plain flour with 1 teaspoon of baking powder in a bowl and gradually add 80ml (⅓ cup) of water. Whisk to remove all lumps. Once mixed to a smooth consistency add a teaspoon of oil and then coat your broccoli stems evenly. Meanwhile, heat some oil in a pan until 180°C (if you don’t have a thermometer, try adding a cube of bread to oil, if it goes brown in 15 seconds it is hot enough). Once hot enough gently add batter-coated broccoli until one side is
golden and a crispy texture and then flip. Remove and get rid of excess oil before serving.

 

Green Soup

Broccoli soup is a warming and substantial weeknight meal. Make by heating oil in a saucepan over medium heat and a adding diced onion, minced garlic and a sprinkle of red pepper flakes. Cook these until tender before adding around 4 cups of veggie broth and bringing to the boil. Add around 6 cups of purple sprouting broccoli, season with salt and pepper and cover the pan. Cook until tender before adding spinach and removing from heat. Once cooled slightly, use a hand blender to blend, adding chopped avocado. Garnish with non-dairy cream and serve.

 

Stir Fry Noodles

There’s little you can’t add to a crunchy stir fry, but broccoli is a great addition nonetheless. Make a tasty stir fry sauce with sesame oil, soy sauce and chilli flakes. Start to cook your rice noodles as instructed and whilst they are heating through begin the veg by heating a pan with oil in it. Add your vegetables including the purple sprouting broccoli, in addition to minced garlic and sliced onions. Once your noodles are ready, add everything to one pan with the stir fry sauce made earlier and heat through for a couple of minutes. Serve for a quick and easy dinner dish.

 

Roasted Lemon Broccoli

We love roasting our broccoli and serving with a lemon vinaigrette. Preheat oven to 220°C. Slice broccoli stems in half and toss with a couple of tablespoons of oil and pinch of salt. Place on a baking tray with the flat side facing down and roast for roughly 30 minutes or until browned. Whilst roasting, combine 1 tablespoon of lemon juice, a teaspoon of zest, a grated garlic clove with a pinch of salt and pepper for seasoning. Slowly mix in 2 tablespoons of oil. Once your broccoli is roasted, drizzle this vinaigrette over and serve.
