Broccoli Mac N’ Cheese

Ingredients

For the 'mac'

300g (3 cups) Cooked
300g (1 3/4 cups)
125ml (1/2 cup)
Water
75g (1/2 cup)

For the cheese sauce

Method

Preheat the oven to 180°C/350°F/ Gas 4. Cook your macaroni according to packet instructions, drain and set aside in a large bowl.

Steam the broccoli in a covered pan, with the water, for 5 minutes, then drain. Add the broccoli to the bowl along with the cooked pasta and set aside.

To make the cheese sauce, in a medium-sized pan, bring the stock to a boil. Add the carrots and cauliflower, and cook on a medium heat for about 10 minutes.

Add the onion and cannellini beans, then reduce the heat to a simmer for 10-12 minutes or until the carrots and beans are soft.

Turn off the heat and add the remaining ingredients for the cheese sauce to the pan. Use a hand blender (or add it all to a food processor) to blend until smooth and creamy.

Pour the sauce over the broccoli and pasta and give it a good mix until the sauce is properly dispersed.

Top with a layer of breadcrumbs and bake for 20-25 minutes or until the top is crispy and golden.
