Broccoli Tater Tots

Preheat the oven to 200°C/400°F/Gas 6 and line a baking sheet with lightly greased parchment paper.

Boil or steam your potatoes, but make sure you don’t over-cook them otherwise your tater tots won’t hold together.

Whilst the potatoes are cooking, steam or boil your broccoli until it is al dente (just undercooked but not raw). Once cooked, finely chop the broccoli until it resembles the texture of couscous.

In a mixing bowl, mash the cooked potatoes with a fork. Add to this the chopped broccoli and all the remaining ingredients. Bring the mixture together with a spatula or using your hands (the mixture should be quite firm but pliable).

Divide the mixture in half and roll each piece into a sausage shape, about 20cm long. Cut each sausage into 10 discs, roughly 1½cm thick, then shape each disc into a small sausage shape.

Arrange the tater tots on the prepared baking sheet, spacing them about 1-inch apart. Bake the tots in the oven for 8–9 minutes, then flip them and bake for an additional 5-6 minutes until golden brown. Serve with our 'get your veg in' sauce.
