Brown Apple Betty

Preheat the oven to 200°C/400°F/ Gas 6. Spread the breadcrumbs onto a large, shallow baking tray and toast for 15 minutes or until golden. Tip into a bowl, add the melted butter and stir well to coat.


In a separate bowl, mix the diced apple with the lemon juice, sugar, cinnamon, ginger, and half of the toasted breadcrumbs. Tip into a well-buttered 1-litre ovenproof dish and then scatter with the rest of the toasted breadcrumbs.


Sprinkle over a little extra ginger, cover tightly with foil and bake for 35-40 minutes or until the apple is tender.


Remove the foil and bake for another 15 minutes or until the breadcrumbs are golden and crisp. Serve with vegan custard, cream or ice cream.

     I added 1tbsp lemon juice, 2tbsp melted butter, 5 slices bread crumbs, 3/4tbsp cinnamon and 1/2tsp ginger. Far too savoury for my tastebuds and not the texture I imagined. I would recommend adding plant milk of choice and ground flax seeds.
