Cajun Lettuce Tacos with Mango Salsa

Mix all of the dry ingredients for the seitan together in a bowl. Make a well in the centre and add all the wet ingredients. Using your hands, begin to combine all the ingredients together, rubbing and breaking up lightly using your fingertips, to create a crumbly ‘mince’ textured seitan.


Heat a splash of oil in a large frying pan and add the seitan ‘mince’. Stir fry over a medium heat for 10 minutes, or until cooked through and starting to crisp up slightly at the edges.


Mix all the salsa ingredients together in a clean bowl and set aside until ready to serve.


Serve the lettuce boats on a large board or platter, with the Cajun seitan, some salsa, a drizzle of hot sauce and some lime to squeeze over.
