Cajun Steak and Rice

Method

Firstly for the seitan place the wheat gluten, plain flour, nutritional yeast, smoked paprika, vegetable stock, soy sauce, marmite and mustard together in a bowl and mix together to form a dough. Turn the dough out onto a work surface and knead for 4-5 minutes until the dough is stretchy. Split the dough into two pieces and roll them out into 2 thin steaks.

Then for the rice add all of the rice ingredients to Ninja Foodi pot, place the seitan steaks onto the reversible rack, making sure the rack is in the higher position and place the rack into the pot over the rice mixture.

Place the pressure lid onto the Ninja Foodi, make sure the pressure release valve is in the seal position and pressure cook on high for 3 minutes. Once the cooking has finished, turn the pressure release valve to vent to quick release the pressure.

Remove the cooked rice from the pot, then mix the olive oil and Cajun seasoning together and brush the seitan steaks, leaving the steaks on the reversible rack place the crisping lid onto the Ninja Foodi and grill the seitan for 4 minutes, serve one steak with half of the rice.
