Cajun Vegetable Peel Crisps

Pre-heat the oven to 200°C/400°F/Gas 6, then mix the vegetable peelings, vegetable oil and Cajun spice together until the peelings are coated. Spread onto a tray and bake for 10-15 minutes until the vegetables are browned and crispy. Season to taste.
