Egg and Dairy-Free Carrot and Banana Bread

Method

Preheat the oven to 180°C  350°F. Lightly spray a loaf pan with cooking spray and set aside.

In a bowl whisk together the oil & sugar until combined.

Whisk in the flax egg* then the mashed bananas, milk, vanilla extract and carrots.

Add the dry ingredients, flours, cinnamon, salt, baking soda and stir until combined

Pour into the loaf pan and place in the middle of the oven.

Bake for 60 minutes until golden brown.
