Cauli BBQ Bites

Ingredients

For the vegan buttermilk:

Salt And Pepper, to season

For the cauliflower coating:

120g (1 cup)
Salt And Pepper, to season

For the BBQ sauce:

120ml (½ cup)
BBQ Sauce
90g (½ cup)
Hot Sauce (Optional)

To serve:

Spring Onions
Handful Flat Leaf Parsley, roughly chopped

Method

Preheat the oven 200°C/400°F/Gas 6, then line a baking tray with baking paper and set aside. In a bowl, combine the milk and cider vinegar, stir well then set aside until it thickens. Season with the salt and pepper.

Place the cauliflower florets in a bowl, toss with the cauliflower coating, then dip into the buttermilk mix, followed by another toss in the cauliflower coating. Place on baking sheet.

Repeat until all florets are coated, and bake for 15 minutes.

While the cauliflower is cooking, melt together the BBQ sauce, butter and hot sauce. After 20 minutes, remove the cauliflower from the oven and drizzle with
the BBQ sauce, ensuring each piece has an even coating. Place back into the oven for 15 minutes.

Serve with ketchup or barbecue sauce and a sprinkling of parsley and spring onions.
