Cheezy Broccoli Calzones

Ingredients

40g (1.5oz
360ml (1 1/2 cups)

Method

Bring a pan of water to the boil and add the broccoli, cook for 3-4 minutes until softened. Then add the butter to a saucepan over a medium heat, and allow it to melt, add the plain flour and mix well to form a roux. Slowly add the soya milk whilst stirring to ensure no lumps and cook until the sauce is thick and smooth. Add the nutritional yeast and vegan cheese and mix well to melt the cheese, season to taste. Add the broccoli to the sauce and stir to mix in well.

For the pizza dough, add the dried yeast and caster sugar to the warm water and leave to sit for 10 minutes. Put the flour and salt into a bowl and add the water whilst mixing to form a dough. Turn the dough out onto a lightly floured surface and knead for 10 minutes until it is smooth and stretchy. Place the dough into a bowl, cover and leave in a warm place for 1 hour to prove.

Preheat the oven to 200°C/400°F/Gas 6, then once the dough has proved, transfer to a floured surface and knead for one minute. Divide the dough into four, and roll each piece out roughly into 6mm thick circles. Place a quarter of the mixture onto one half of the circle and fold the other half of dough over the mixture and squeeze the edges together to seal it. Repeat for all four, then place in the oven and bake for 25-30 minutes.
