Chef Catherine Frelon is hosting her third Explore Your Market event at Borough Market this Saturday, 23 June. The event is being held at The Cookhouse, and will focus on vegan Mediterranean dishes, influenced by the Amalfi Coast, France, Spain and Morocco.
Included in the experience is a demonstration from Frelon on how to source the best ingredients for your dishes, including a shopping trip around the market. The ingredients sourced for the dishes are from award-winning market traders.
Dishes that will be made include a French Roasted Peach and Beet Salad with Rocket and Hazelnut Dressing, a Moroccan Bakula with Couscous, and a Spanish Baked Red Lentil Falafel Salad.
Guests are encouraged to participate in the creation of the dishes alongside Frelon, and learn hands on before sitting down to enjoy the freshly prepare meal. Frelon will also give tips on a balanced vegan diet and outline the cupboard essentials.
The one-day course starts at 9.30am and finishes at 4pm, on Saturday 23 June. You can book tickets here. The courses are run monthly, with a different cuisine each month.
