A chef has opened a plant based restaurant after overcoming diabetes with a vegan diet. Christopher Oliver has opened Unburger Grill with his sister, Jane Beckwith in West Dearborn, Michigan. The food is going to be sold for an affordable price, mirroring the prices of standard fast food.

Oliver switched to a plant based diet two years ago after being diagnosed with diabetes. By trade, he is a restaurant manager and chef with three decades experience and was prompted to open his own restaurant.

Talking to the Detroit Metro Time, Oliver said: “Just two years ago my doctor informed me my diabetes was out of control. I made radical changes and embraced plant based eating. My life improved dramatically. I achieved victory over diabetes.”

The Unburger Team are currently fundraising, and on their page they say: “The vegan restaurant as a concept is still in its infancy in most of America. The average vegan when dining out must settle for the very limited choices provided at traditional eateries. Such choices do not exist in most fast food concepts and fail to meet vegan needs.

“Unburger Grill will in many be breaking new ground. This awareness helped shape the menu design. Unburger Grill seeks to offer a ‘comfort food’ appeal we are all familiar with. In using a comfort food approach, we are reaching non-vegan consumers as well.”
