Preheat oven to 180°C (Gas Mark 4, 350°F). Place the plain flour and salt in a large bowl and mix. Cut the non-dairy butter into small chunks and add these to the bowl. Using your fingertips, lightly rub the butter into the flour to create a breadcrumb like mixture.
Stir the brown sugar and oats through the flour mixture and set aside.
Place the cherries in a small pan with the caster sugar, vanilla pod and seeds and 2 tablespoons of water. Bring to a gentle simmer to dissolve the sugar. The cherries will soften but don’t overcook as they will fall apart.
Divide the cherry mixture and juice between 4 ramekins and top with the crumble mix. Place the crumbles on a baking tray and cook in the oven for 20-30 minutes or until golden, crispy and bubbling. Serve immediately, with some non-dairy cream or ice cream on the side.
