Pour the coconut milk into a small pan, set over a low heat and warm through.
Break the chocolate into small pieces and place in a bowl. Add the coconut oil to the bowl, then pour into the coconut milk and stir slowly to combine.
Once the chocolate and coconut oil are melted and the ingredients are combined, place the mixture in the fridge and leave to harden for at least 4 hours.
Using a teaspoon, scoop out a spoonful of the chocolate mix and carefully roll it in your hands.
To decorate the truffles, roll the chocolate balls in any of the suggested coatings.
