Chocolate Bread Pudding and Toffee Sauce

The Chocolate Bread Pudding (serves 16)

Toffee Sauce (makes 250ml of sauce)

100g (½ cup)
50g (¼ cup)
160ml (⅔ cup)



To make the chocolate bread pudding:

1. Preheat the oven to 180°C/355°F/Gas 4, then add the milk, flaxseed, dark chocolate, cocoa powder and sugar to a bain-marie and mix together until fully melted and combined.

2. Add the cubed bread to a deep oven dish and pour over the chocolate mixture, mix well and leave to soak for 30 minutes. Place into the oven to bake for 45-50 minutes, until baked through.


To make the Toffee Sauce:

1. This quick toffee sauce recipe is great to serve with sticky toffee pudding or cooled down to go with ice cream. Using coconut cream gives the toffee a lighter flavour than a traditional toffee sauce.
