Christmas Confetti Soup

Servings: Serves: 4 as a starter or 2 as a main

Heat some olive oil in a pan and gently sweat the onion, celery and carrot for 2 minutes. Add in the peppers, garlic and courgette and continue to cook until translucent.


Stir the flour into the vegetables and combine well.


Add the stock, stirring continuously. Then, add in the butterbeans, kale, salt and pepper and simmer on low for 10–15 minutes, before serving.
