Add the soya milk, cinnamon, ground flax seed, caster sugar and orange juice into bowl and stir well. Then mix the diced bread, dried cranberries and orange zest together and put into a greased baking tray and pour over the soya milk mix. Leave for one hour to allow the bread to soak up all the soya milk.

Preheat the oven to 180°C/355°F/Gas 4, then sprinkle the Demerara sugar over the bread pudding and place in the oven to bake for 60 minutes until the top is golden and the pudding is cooked. Allow to cool slightly before cutting.
