To make the dressing, soak the cashews in the water and leave overnight in the refrigerator. Once soaked, add the lemon juice and garlic to the cashews and blend with a stick blender; set aside.
Pre-heat the oven to 200°C/400°F/Gas 6. To make the quinoa bites, mix the quinoa, flaxseed, white onion, garlic, thyme, nutritional yeast and ground almonds together in a large bowl.
Next, take teaspoons of the quinoa mixture and make into equal-sized balls. Place the balls on a non-stick tray (or a tray lined with baking parchment) and cook in the oven for 15-20 minutes until golden brown and crispy. Serve on sprinkled atop a salad and drizzled with the tangy dressing.
