Crocfast Ackee Fritters



Add the plain flour, gram flour, baking
powder, soya milk, coriander, chilli flakes,
thyme, and garlic to a bowl and whisk well to
form a smooth batter. Then, add the ackee
and whisk again to break up the pieces, be
sure to leave some small lumps.


Add oil to a frying pan for shallow frying
over a medium-high heat. Add a heaped
tablespoon of batter to the pan and flatten
slightly. Cook for 3-4 minutes then flip over
and cook for a further 2-3 minutes until they
are cooked through.
