Cucumber, Avocado and Mint Gazpacho

Add all the soup ingredients to a blender and blitz until smooth. Then place in the fridge to chill.


For the garnish, simply mix all the ingredients together. To serve, divide the soup between four bowls and sprinkle a little garnish over the top of each.
