Dairy-Free Macaroni Cheese

Method

Bring a pan of salted water to the boil, add the pasta, and cook to the packet instructions or until pasta is al dente.

Meanwhile, in a separate saucepan, sauté the onion, garlic, broccoli and cauliflower over a low heat stirring often.

Blitz the walnuts with the soya milk until smooth, then add to the pan containing the onion mixture.

Drain the pasta and set aside. Add the mustard and cayenne pepper to the saucepan, then stir in the pasta. Add the cream from the top of the coconut milk, nutritional yeast, and seasoning, and cook over a low heat until thick and creamy. Serve with a sprinkling of paprika.
