To make the dhokla, add the gram flour, ginger, chilli powder, turmeric, garlic powder and salt to a bowl and mix well. Then add the lemon juice and water, and whisk until you have a smooth batter. Then add the baking powder and whisk in well. Transfer the mix to a small loaf tin and place into a steamer to cook for 15-20 minutes or until a skewer comes out clean when poked through the dhokla.


2 For the tempering, add the oil to a frying pan over a medium-high heat. Then add the mustard seeds and cook for 1-2 minutes until they start to crackle. Add the sesame, cumin and chilli and cook for 1-2 minutes. Then add the sugar, lemon juice and water and boil for 1-2 minutes. Pour this evenly over the dhokla, allowing it time to soak in. Cut into 12 pieces, to serve.
