Ingredients

335g (2 2/3 cups)
450ml (2 cups)
150ml (2/3 cups)
Water
A 12 Hole Non Stick Muffin Tin

Preheat your oven to 200°C (Gas Mark 6, 400°F). Place a teaspoon of fat into each muffin hole and transfer the tin to the oven.

Add all the other ingredients to a large jug and whisk well until smooth. Leave to rest for 10 minutes while the muffin tin and fat becomes very hot.

When ready to cook the puddings, whisk the batter briefly and remove the tin very carefully from the oven. Pour an even amount of the batter into each muffin hole as quickly and carefully as possible.

Return the filled tray to the oven and gently close the door. Leave the puddings to cook, without opening the door, for 25 minutes.

Once the puddings are golden brown and well risen, remove from the oven and serve immediately.
