In a medium saucepan place all ingredients and bring to a boil until sugar dissolves, stir occasionally. Reduce to a low heat and cook the figs uncovered, stirring occasionally, for roughly 30-60 minutes until a thick and sticky jam consistency.
Remove from heat and discard vanilla pod.
Process the jam in a food processor and spoon into jars. Cool to room temperature, then refrigerate.
Store jam in the refrigerator for up to 2 months.
