Ingredients

200g (7oz)

Red Pepper, diced
½
green pepper, diced
Salt and pepper, to taste

To garnish

Method

Cook the freekeh according to packet instructions and leave to cool.

In a bowl, mix together the courgette and peppers, then season to taste with the salt and pepper.

When ready to serve, toss through the parsley leaves and the pomegranate seeds.
