Gin and Elderflower Tonic Lollies


50g (1/4 cup)
30ml (2 tbsp)
50ml (scant 1/4 cup)
Cold Water
90ml (generous 1/3 cup)
600ml (gernerous 2 1/2 cups)
100ml (scant 1/2 cup)
Lemon slices and edible flowers – optional

Ice Lolly Mould



In a pan over a low heat, dissolve the sugar in the lemon juice and water. Set aside to cool.


When cool, mix in the other ingredients and pour into lolly moulds. Place any decorative flowers and a lemon slice into the moulds and freeze overnight.
