A white root vegetable, parsnips are comparable to carrots in shape. It is closely related to parsley and carrots, however it benefits from winter frosts. Frosts encourage the flavour to become sweeter, which is often enhanced when it is roasted. Parsnips can be eaten raw, however they are usually cooked. They are in season during autumn and winter.
