Preheat oven to 180°C (Gas Mark 4, 350°F). Using a sharp knife, make cuts in each potato, about 0.5cm apart, taking care not to cut all the way through.
Add the oil to a large roasting dish (use 2 if needed) and add the prepared potatoes. Sprinkle over the salt and pepper and add the garlic cloves.
Toss everything together to coat everything lightly in the oil and transfer to the oven. Cook for 1 hour, or until golden and crispy. Serve immediately.
