Add the sesame oil, garlic, shiitake mushrooms, bamboo shoots, bean sprouts, dried chilli flakes and ground ginger and cook for 3-4 minutes until softened.


Then add the rice vinegar, soy sauce and vegetable stock and bring to the boil. Once boiling, add the cornflour; stir and continue to boil for 1-2 minutes until thickened slightly. Add the tofu, spring onions and coriander to serve.
