Hot Cross Buns

Ingredients

180ml (3/4 cup)
80g (3oz)
60g (2oz)
30g (1oz)
1 tbsp
Fresh water

Method

Preheat the oven to 200°C/400°F/Gas 6. Combine the warm milk, melted butter, sugar and yeast and allow to sit for 2-3 minutes. Add the flour, sultanas, mixed peel and mixed spice and mix to form a dough. Once formed, place it on to a floured surface and knead for 5-6 minutes.

Put the dough in a covered bowl and leave in a warm place for 30 minutes until doubled in size. Once the dough has proved, knead it on a floured surface for a further 3-4 minutes.

Split the dough into 6 and roll into balls. Place the balls of dough on a lined tray and prove them in a warm place for 30 minutes until double in size. Brush the tops with maple syrup.

Make the cross by mixing together the plain flour and water. Put the mixture into a piping bag, and pipe a cross onto the buns. Bake in the oven for 20 minutes.
