Begin by boiling the pasta according to packet instructions – make sure to reserve 80ml of the pasta water to use in the pasta sauce. Once cooked, drain the pasta and drizzle with olive oil so it doesn’t stick together; set aside.
Once the pasta is cooked, in a large saucepan, heat the oil over a mediumhigh heat and fry the red onion until translucent and softened, then add the garlic and fry for a further few minutes.
Add the spinach, peas, houmous, lemon juice and reserved pasta water to the saucepan and cook until heated through.
Add the cooked pasta to the saucepan, stir to combine and serve topped with the toasted pine nuts, lemon zest, chives and cherry tomatoes.
