Italian Orzo Soup

In a large saucepan heat the oil and add the onion, celery, garlic and carrots. Cook for 5 minutes until the onion is translucent and the carrots are slightly softened.

Add the pepper, chilli and courgette and cook for a further 3 minutes.

Add the bay leaves, dried herbs, stock, orzo and tinned tomatoes and simmer for 8- 10 minutes – or until the orzo is cooked through

Stir in the olives, chard and fresh herbs and cook for 1 minute or until the chard is wilted.

Season to taste with salt and pepper.
