Add the oil to a large saucepan, over a medium heat. Add the onion, red pepper, jalapeños and garlic, and cook for 3-4 minutes until softened.


Add the smoked paprika and Cajun seasoning and cook for a further 1-2 minutes. Then add the brown rice and tomatoes, mix well and add enough stock to cover the rice. Leave to simmer for roughly 30 minutes, whilst topping up with stock, until all of the stock is used. Add the chickpeas after 20 minutes.


Once cooked, the rice should be tender and most of the stock should be absorbed. Season to taste before serving.
