Jerk Seitan Skewers

Servings: Makes 4 skewers




Firstly, put the vital wheat gluten, gram flour, onion powder, garlic powder and thyme into a bowl and pour in the water, soy sauce and vegetable oil. Mix this together to form a dough, then knead for 5-6 minutes until it becomes stretchy. Split into 16 pieces.


Bring the stock to a gentle simmer in a large
saucepan, then add the seitan and simmer for 45 minutes. Remove the pan from the heat and leave the seitan to cool in the stock.


Add all the marinade ingredients into a bowl and mix well. Add the seitan into the bowl and leave to marinate for 30 minutes. Put four pieces of seitan and five pieces of pepper on each skewer then cook on the BBQ for 3-4 minutes on each side.


To make the lime yoghurt, mix all the
ingredients together.
