Jerk Spice Mix
Jerk spice mix – It’s believed that jerk seasoning originated in Jamaica in the 1700s, when a group of people, who were being kept as slaves, escaped and hid in the Blue Mountains of the country. The group was later known as the Maroons. Living in the mountains, food was in short supply, and so whatever food the Maroons could gather from the forest they would have to carefully preserve. To do this, they’d cover the food in salt, peppers and spices, and then wrap it in leaves, before eventually barbequing it. This original mix of spices and salts evolved over time to become the moreish and flavour-rich combination we know today – and has become a favourite in vegan kitchens across the globe!
