Preheat the oven to 200°C/400°F/Gas 6. Pour the oil into a frying pan over a medium heat, and sauté the onions and thyme for 4-5 minutes until soft and brown.

In a baking dish layer the sliced potato, artichoke and cooked onion, repeating until all the ingredients are used and the dish is full. Pour over the stock and place in the oven for a 50-60 minutes. To check if the boulangere is cooked push a skewer through the centre – it should go through with ease.
