Laksa Noodle Curry

For the laksa paste, in a medium pan over a medium heat, melt the coconut oil. Then add the chillies, onion, garlic, cashews, paprika, coriander, tumeric, kaffir lime leaves and ginger, and sauté for 4-5 minutes. Then add the lime juice, tamari soy sauce and taramind and blend the mixture in a food processor until smooth.


For the curry, in a large pan over a medium heat, add the oil, cabbage, carrots, red pepper, Oumph! and bean sprouts, and sauté for 3-4 minutes. Then add the laksa paste, coconut milk, and vegetable stock, and simmer for 2-3 minutes. Add the noodles and cook for a further 1-2 minutes.


To serve, divide into 4 bowls and top with the spring onions, coriander, chilli and a lime wedge.
