Preheat a frying pan over medium heat.

Mix flour, baking powder, sugar, lemon zest, blueberries and sea salt in a large mixing bowl.

Add the lemon juice, almond milk and vanilla extract mixing until well combined.

Scoop about 60g (1/4 cup) of batter onto the pan and cook until bubbles appear and the edges look dry.

Flip and cook the other side until golden brown. Serve with maple syrup, blueberries and fresh lemon juice.
